Dr. Vasiliki Oikonomopoulou is chemical engineer and post-doc researcher. She holds a Ph.D. in chemical engineering from the National Technical University of Athens in the field of food products development. She is currently working on LCA and economic evaluation of several products and processes. Her research also concerns the design and optimization of several physical processes, such as drying, extrusion, extraction and encapsulation, as well as the design and development of innovative functional food products. She has participated in several research and business projects funded by the European Commission and national funds. She has 8 publications in international peer reviewed journals, 30 publications in Greek and international conferences and 2 book chapters.
